Scrumptious Seasonal Slaw

I have made this three times this past week. In fact I ate it for breakfast this morning!

This recipe is easy, versatile, healthy and yummy.

Cabbage - the rose of the vegetable garden

  • 1 med. cabbage – thinly sliced
  • 2 large carrots – grated
  • 1 big or 2 small apples – cubed
  • 1/4 cup organic extra virgin olive oil
  • 1 heaping Tablespoon  raw honey
  • 6 Tablespoons of organic apple cider vinegar (with the mother – it should be cloudy when shaken)
  • 1/2 organic currants or raisins (I like currants because they have a lower glycemic level)
  • 1/2 teaspoon sea salt
  • 1/2 cup organic walnuts

In a large bowl mix the cabbage, carrots, apples and currants/raisins

In a small bowl mix oil, raw honey, sea salt and apple cider vinegar.

Dress the cabbage mix and then toss in the walnuts.

I have added grapes with succulent results.

Try pear instead of apple for a lovely change.

Part of what makes this recipe so tasty is the contrast between the sweet and tangy. So play with the amount of honey versus apple cider vinegar to suit your taste.
