I made this for lunch and it was so quick, easy and delicious I had to share it with you.

It has such a nice blend of crunch from the Jicama and Cucumbers, salty from the Olives I add, and sweetness from the ripe Tomatoes with a citrus zing. Mmmm!

In this season – late summer, early fall – I like to make sure  I have fresh Basil and Tomatoes in the house. With those two as a start, there is always a good meal to be had.

Tomato, Jicama & Cucumber Salad

Ingredients:

  • 1 Tomato
  • 1/2 medium Jicama – cut off the rough skin. (If you haven’t tried Jicama – please do! – ask for it at your grocery store – it’s a big brown root with an all-edible white, Asian Pear’ish core)
  • 1/2 Cucumber
  • 8-10 pitted Olives – in this salad I used Kalamata, but use your favorite, or whatever you have on hand.
  • 1-2 Tablespoons of Fresh Basil
  • Olive Oil  – 1 Tablespoon or to taste – depends how oily you like it.
  • 1/2 Lemon for the juice
  • Sea Salt & Pepper

How to:

  • Dice the Tomatoes, Jicama and Cucumber and mix them together.
  • Add Olives
  • Add chopped fresh Basil
  • Drizzle Olive Oil.
  • Squeeze Lemon over the whole thing.
  • Sea Salt & Pepper to taste
  • Toss and Enjoy!
