This is what I had for breakfast! A fresh beautiful Waldorf Salad!
I knew today was going to be a busy day. I would not have time later to pull together a lovely salad, but I did have 20 minutes before the whole day got really rolling. I seized the moment to create a vibrant meal, and rather than pack it up for lunch, I sat right down and ate it. It looked so fresh and so vibrant. It looked exactly the way I wanted to feel!
Why salad first thing in the morning? Why not? Why does breakfast have to be, well, breakfasty? Why can’t it be lunchy or dinnery.
The real question is: What sets you up well for the day? What is the meal that makes you feel energetic and focused for the projects that lie ahead? Whatever that is, even if it doesn’t fit into a breakfast category, go for it.
If you are thinking my salad looks pretty good, here is the recipe.
It is inspired by Renee Loux Underkoffler‘s New Waldorf Salad in her book Living Cuisine: The Art and Spirit of Raw Foods.
WALDORF SALAD – vegan & raw
- Leafy lettuce
- 1 apple
- 2 celery stalks
- 1/4 cup raisins
- 1/4 cup juice sweetened dried cranberries (omit the cranberries if you can only find sugar sweetened)
- 1/2 cup walnuts
Dressing:
This is almost exactly Renee Renee Loux Underkoffler’s Waldorf Dressing. I love it just as she created it.
Blend together:
- 3 tablespoons raw sesame tahini
- 1 clove garlic (despite garlic’s great medicinal properties, I did not put it in my morning dressing)
- 1/4 cup lemon juice (I just squeeze one lemon)
- 2 tablespoons apple cider vinegar
- 1 tablespoon organic extra virgin olive oil
- 1 1/2 tablespoons raw honey or 2 soft dates
- 2 teaspoons dill
- 1 teaspoon sea salt
- water – to get the consistency you want.
