This drink is refreshing and deeply nourishing. Goji berries are a powerful superfood!

Here is some of what Goji berries offer:

  • Anti-bacterials & Anti-fungals
  • Vitamin B complex and Vitamin E

  • 21 trace minerals, including zinc, iron , copper, calcium, selenium, germanium sesquioxide, phosphorus

Goji Berry Iced Tea – (or warm tea)

It couldn’t be easier to add some nutrient rich-Goji berries to your day!

You can make this a warm tea as well. Add boiled water and then let it cool naturally to room temperature as the day wears on, or add ice cubes.

Ingredients:

  • Water – whatever amount you like
  • Goji Berries – About 1 tablespoon per 2 cups of water
  • Raw Honey (optional) – to taste
  • Squeeze of lemon – (optional)

How to:

  • Put Goji Berries in pitcher.
  • Pour cold or warm water on Berries.
  • Let is steep until the water turns a lovely reddish color and the Goji’s are plump. This will be a shorter amount of time if it’s warm water versus cold water.
  • Chill if you like.

You can eat the plump Goji’s when you are finished drinking the water, or throw then into a smoothie.  However, I like to use the soaked Goji’s in muffins or cookies for my kids. They go quite nicely in my leftover-oatmeal muffins [just be sure to add a bit more flour in your recipe to counteract the moisture of the plump Goji’s.)
