This past weekend I was in NYC for my graduation from The Institute for Integrative Nutrition’s Advanced Training. Ya-hoo! It wasn’t just the culmination of 2 years of study: it was an affirmation of the 20 years that I have spent studying and working in the field of Holistic Health. Sometimes I wish I didn’t need the external validation, but it sure does feel nice to have a piece of paper that confirms and affirms what I know.
Part of my Advanced Training is that I mentor new Health Coaches. This year I coached 21 amazing Health Coaches. They are ready to roll! More healthy help is on the way!
While I was in NYC, I went out to lunch with a small group of my “mentees.” I brought them to Rosa Mexicano. It was a perfect choice for us because it met all of our needs. For me, they had some fresh raw dishes. They also had a gluten-free menu and plenty of fish and meat dishes for those with interest.
One of my favorite things about Rosa Mexicano is watching them whip up fresh guacomole. I filmed it for you to see.
Rosa Mexicano’s Guacomole
Ingredients:
- 2 avocadoes – diced. To see my quick-trick of getting out the pit and dicing an avocado, check out my belly bowl recipe
- 2 heaping tablespoons of chopped cilantro
- 1 tablespoon of chopped onions
- 2 heaping tablespoons of chopped tomatoes
- salt to taste (they put in more salt than I would at home)
- Add spice to taste – they use green hot peppers for the extra spicy, or just a dash of cayenne for just a little kick.
How to:
- Scoop the avocado into a bowl
- Add all the rest of the ingredients
- Mix and mash it all together.
Delicious!!!
