I was very cold, but very happy in the Boston Organic’s walk in cooler!
Call me a food nerd, but being in a room full of fresh organic produce is to me like (excuse the analogy) being a kid in a candy store! (O.K. maybe not my kids, because they would tell you why the candy, even though you love it, doesn’t love you back!) If you want to know more about loving the food that loves your back, here is a short article.
Here is the recipe I created when I saw all the beautiful produce they had.
It couldn’t be easier:
Raw Egg-Rolls
In a bowl:
Grate: (If you are making this for one or two people, a hand grater will do, if you are doing this for a crowd, use a food processor)
- Carrot
- Beet
- celery
- onion
Add:
- Mung bean sprouts or any other tasty sprout
- Spicy Sauerkraut from Real Pickles.
Wrap it in:
- cabbage leaf or collard green leaf
So easy, portable and fresh! Be flexible, use whatever is in your fridge. Be creative, make up your own favorite!

A mandolin would be just right if making a quantity too large for hand grater and too small to bother with food processor. And I imagine the fresh veg roll would be great with a nut-based dipping sauce (and a big napkin – rolls almost always fall apart all over me!)
