Since getting back from Peru I am on a Quinoa kick!

This recipe calls for sprouted quinoa which makes it a super-duper nutritious grain! Sprouting grains, seeds and beans make them more digestible and increase their nutritional value.
Here is how to sprout quinoa:
- Rinse your organic quinoa
- Place in a bowl or sprouter
- Cover with water and let soak 4-6 hours
- Empty out the water and rinse the quinoa.
- Place them back in the bowl or sprouter and let ’em grow!
- Rinse them thoroughly morning and night for 1-2 days.
- They are done when they have a little tail.
- Don’t let them grow too long, they lose some of their nutrition and are not as light and crunchy
Here is one my my favorite raw quinoa salads.
RAW Quinoa Confetti Sprout Salad –
I have included amounts for this recipe, but adjust to what you have in your fridge and what suits your taste. It is completely flexible.
- 3/4 cup mung sprouts
- 3/4 cup adzuki sprouts
(If you don’t grow your own sprouts you can buy small containers of sprouted mung, adzukis and lentils at Whole Foods. Or come to my Raw Food Class and learn how! It’s so easy and cheap!)
- 3/4 cup sprouted quinoa
- 1 grated carrot
- 1/2 cup slivered red cabbage
- 1/2 red pepper, diced
- 1 diced celery stalk
- 2 slivered collard green or kale leaves (or cucumber or anything else fresh & green)
- 1 diced avocado
- 2 tablespoons chopped fresh cilantro, basil, parsley, whatever fresh herbs available
Dressing
- 2 tablespoons olive oil
- juice of 1/2 lemon
- 1 tablespoon apple cider vinegar
- pinch sea salt
For a lovely presentation. Stuff it in an avocado shell or serve on a bed of mesclun mix
