Pan Fried Tofu and Veggie Egg Rolls

Making dumplings or egg rolls is so much easier than I thought. My kids love dumplings and for a while we were buying them, but I wanted a healthier, fresher option.

These can be egg rolls or dumplings depending on the wrapper. I use Nasoya wrappers. The wonton wrappers are small squares and the egg-roll wrappers are big squares.

I find that using the egg roll wrappers is easier and faster, and more tofu/veggie mix fit in each, but, the wontons make a tasty little morsel. And, after much tasting, comparison and debate, my family decided that the egg rolls were better fried and the wontons were better steamed.

Be sure to make enough for leftovers, my kids loved them in their lunch box!

Ingredients:

  • 1 package of Nasoya wrappers (either wonton or egg-roll)

Filling:

I have made this filling in advance so that I can quickly assemble the dumplings for dinner. This recipe makes a lot of filling. Keep it covered in the fridge for a few days for the next round. Kids love making them and eating them.

Choose organic and fresh ingredients whenever possible!

  • 1 tablespoon of extra virgin organic olive oil
  • 1 onion – diced
  • 1 large celery stalk diced
  • 1 cup of cabbage diced
  • 1 cup carrots – grated
  • 1 package of tofu – (my current favorite is Vermont Soy Tofu – It’s local, organic and non gmo)
  • 1 tablespoon grated ginger (the trick to easy grating is to freeze your ginger, and grate it frozen).
  1. Sautee all of the above in the olive oil until soft.
  2. Place mix in the wrapper .
  3. Wrap it up – For wontons fold the square to make a triangle and pinch the edges. For egg rolls, fold in one corner over the filling. Fold in the sides and then wrap it up.

To pan fry:

  • Heat 2-3 Tablespoons of oil in skillet- I use Spectrum High Heat Sunflower Oil
  • Add wonton or eggroll.
  • Brown on both sides and then place on paper towel or a clean brown paper bag to absorb any excess oil.

To steam:

  • Lightly oil a steamer basket. Steam for 5-8 minutes, until the wrapper is translucent.

Dip in tamari or soy sauce if you like.
