Every week in our house we make a bit pot of perfect brown rice in our heart-shaped pot. It’s my husbands job. He soaks the rice overnight in water (for greater digestibility) and then for fullest flavor, we bake our rice. (Here’s how to make perfect brown rice)

Most weeks we use the rice for savory meals, but as the weather turns cold, a sweet and healthy rice pudding really hits the spot.

Healthy Non-Dairy Brown Rice Pudding

Ingredients:

4 cups cooked brown rice
3 cups almond or hemp or coconut milk
3 eggs
1/4 cup coconout oil – liquified (just melt it over a very low heat)
1/2 cup dried fruit – raisins, cherries, apricots (I made mine with unsweetened dried cherries)
1/2  cup nuts – pecans or almonds (I used pecans because they go so well with cherries)
2 tablespoons maple syrup
2 tablespoons coconut sugar or date sugar
sprinkle of cardamom and/or cinnamon
2 teaspoons of freshly grated ginger (optional – but lovely)


Directions:
Combine all ingredients and pour into 9×13 baking pan. Sprinkle cinnamon and/or cardamom  on top. Bake at 325F for 1 hour. Serve hot, cold or at room temperature.
