Healthy “raw” fudge

“Make me something from nothing” Ruby (my 7 year old) said. She was about to have her friend Lola over to play and I wanted to prepare a snack.  Little did I know that “something from nothing” would became a fabulous fudge something.

“Something From Nothing” in our house means make something up without looking at a recipe. So here is what we did.

For this fudge we used the Vita-mix -my favorite powerful kitchen tool, although I think a food processor would work for this recipe too.

In Vita-mix:

  • 1 cup Raw Organic Walnuts
  • 3/4 cup Organic Raisins
  • 3/4 cup Blueberries
  • 2 Tablespoons of Raw Cacao Powder
  • 1 Tablespoon Raw Coconut Oil or Coconut Butter
  • 1 Tablespoon Raw Honey

Blend it all up. The consistency should be pasty. You can play with the consistency by adding more nuts to make it firmer or more blueberries to make it looser. This is the “dough” in my Vita-Mix Blender.

Fudge in Vita-Mix

Pat it down flat on parchment paper.

Place in freezer until firm enough to cut into whatever shape you like. Replace in freezer until you are ready to eat.

The kids loved them! I loved them! They were a total success on all fronts.
