This weekend I’ve been at a phenomenal Health Coach Conference in NYC with my alma-mater The Institute for Integrative Nutrition.

I had a fabulous time seeing dear friends and meetimg new ones. Connecting with some of you – my dear readers, live at the conference – was a special treat. Thanks so much for introducing yourselves!!!

I’m notorious for bringing my Vitamix (superduper blender) with me wherever I go, so I can make a green smoothie for myself in the morning. You can read about that here. But this time, I didn’t have to do it because I was graciously hosted by one of my colleagues (who has one herself). It was such fun – 3 health coaches in a NYC apartment – there’s bound to be lots of laughter and delicious food.

The night before our conference, we stopped at Whole Foods to pick up ingredients for our morning green smoothie. (If you’ve never seen me make a green smoothie, you might want to check out this video.) I spied a young coconut and knew that it would make our green smoothie super luscious, and even more nutritious.

As I was making our early morning green smoothie, my friends stopped the action to capture on video how I open a young coconut (they wanted to learn how).

My hair is still wet and I’m not totally awake – but here’s how I do it…

 

I encourage you to experiment with adding fresh coconut to your diet. It’s delicious and nutritious!

Coconut water and coconut meat are incredibly nutrient dense.

Coconut water is deeply hydrating. It’s like a natural gatorade. Coconut meat is a healthy fat that boasts benefits such as better thyroid functioning, weight loss, glowing skin, and better digestion.

I love putting young coconut into my green smoothie!
