Winter squashes are my short cut, when it comes to making easy healthy meals in the fall. Simply by putting a squash in the oven I’ve given myself a healthy start to a delicious meal.

Note: often, for ease, I don’t even cut the squash before I put it in the oven! I just put the
    squash in the oven whole and when it’s cooked, I cut it open and take out the seeds – it’s
     so much easier!

This week, I want to share with you my Stuffed Squash recipe. 

What I love about this recipe, is that it’s so flexible. It will work with pretty much any veggies you have on hand, and you can add in the kind of protein your family enjoys.

If you don’t love pomegranates as much as I do, substitute them for orange slices or red pepper, or something else that makes it bright and beautiful! I love when food looks as good as it tastes.

Stuffed Acorn Squash

Ingredients:

 

  • 3 Acorn Squash
  • 1. 5 cups Cooked Brown Rice, I use leftover rice
  • 1 medium Onion – chopped
  • 8 -10 Mushrooms – any variety – chopped
  • 3 cups Spinach, chopped
  • 1 Apple – chopped
  • 1 large clove Garlic – minced
  • 1/4 cup Currants or raisins
  • 1/4 cup Pecans – chopped
  • seeds from a half Pomegranate
  • 2 tablespoons Olive Oil or Coconut Oil

 

Directions:

1. Bake Squash:  Cut acorn squash in half. Scoop out seeds. Lay cut side down on baking tray lined with  parchment paper (for ease of cleaning). Bake for 30 -40 min. until soft

(Alternatively, put the squash in the oven whole – bake until you can easily insert a knife – approx 50 min.)

2. Sautee onion and garlic with 2 tablespoons olive oil or coconut oil until onions are soft

3. Add vegetables and fruit: Add chopped spinach, mushrooms, apples, currants/raisins, nuts (or any other protein you like),  and rice. Sautee until everything is soft, well blended and warm.

4. Mix in pomegranate seeds

5. Stuff acorn squash with filling, and either serve immediately, or set aside and warm it up at 350 for 20 minutes, when you are ready to serve.
