I love my green smoothies, they make me feel full of calm vibrant energy. As a mom, I of course, want to pass my green smoothie enthusiasm on to my kids. But my favorite version doesn’t do it, they don’t love it. So we have been experimenting with kid-friendly green smoothies. This basically means a sweet smoothie that is still packed with vibrant fresh greens. We found this one that my daughter, Ruby really likes.
It’s from Victoria Boutenko’s book Green Smoothie Revolution. Ruby doesn’t like it too thick so we add a few ice cubes to the original recipe.
Pineapple Spin
- 1/4 of a pineapple – about 3/4 cup
- 1 cup organic spinach
- 3 ice cubes.
Blend until smooth. Mmmmmm!
