Happy Valentines Day!

I adore Valentines Day.

I’m all for a day where  folks are encouraged to share their warmth, love and affection for each other. In fact, I wish we could all do it a little more often – minus the commercialism that goes with it.

A few years ago I received this wonderful pot on Valentine’s Day from my honey. It’s become our brown rice pot. We make a big pot of rice in the beginning of the week, so we always have a quick healthy base for our dinners.

This brown rice always comes out perfectly. The secret is baking the rice.

Baked Brown Rice

  • Pre-heat oven to 350
  • Use a pot and lid that can go from the stovetop straight into the oven.
  • Bring 1 part rice to 2 parts water to a boil on the stovetop. (if you like to pre-soak your rice to increase digestibility of the rice – it breaks down the phytic acid  – reduce the water to 1.5 parts water to 1 part rice)
  • When it has come to a boil put it in the oven, with the lid on, for 45 minutes.

This works for any kind of brown rice.

A couple of notes:

  • For a real comfort food experience, use sweet brown rice.
  • When I really don’t want to have to think about it again. I set my oven to turn off automatically in 45 minutes. Most ovens have a stop-time function.
  • My husband also throws in quinoa and/or millet with the rice, for interesting variety.
