Chia Seeds are so wonderful! I throw them into everything. They are nutritional power-houses!

 They are…

  • Packed with protein
  • Loaded with fiber
  • A good source of calcium
  • Considered an endurance food, because it keeps you energized for hours
  • High in Omega 3 fatty acids – good fat!
  • Stabilizing to blood sugar levels (stop that sugar roller-coaster)

Here’s one of my favorite ways to enjoy Chia Seeds:

Raspberry Chia Seed Pudding!

Chia seeds are wonderful fun when it comes to creative cooking, because they absorb water and turn into a gel. This makes them perfect for this super-easy pudding.

This recipe is fantastic for those of you who want to have less sugar in your life. It’s only sweetened with fruit (the raspberries) and 4 drops of vanilla stevia. Stevia is a low-glycemic index sweetener which is perfect when you are working to keep your blood sugar-levels stable.

Chia seed pudding ingredients

 Ingredients (use organic whenever possible):

  • 1 cup coconut milk (I use Native Forest canned coconut milk because their cans are BPA free)
  • 1 cup raspberries – fresh or frozen
  • 4 tablespoons chia seeds
  • 4 drops vanilla stevia (I use Sweet Leaf brand)

How to:

  • Mix chia seeds into coconut milk. Stir well – don’t blend, just stir.
  • Add raspberries and stevia. Stir well, use a fork and break up the raspberries to allow the raspberry flavor and color to spread throughout the pudding.
  • Refrigerate for at least 1 hour, until it’s a thick, pudding texture.
  • Enjoy!

Notes:

  • Other fruit would work, but I like the seed-y texture of raspberries, because they complement the seed-y texture of the chia seeds.
  • I often put this pudding in small mason jars, and pack it in the kids’ lunch for a super-nutritious snack.
